For the Stew preparation
- Any meat of your choice ( Beef, Chicken, Goat, Or fish)
- Fresh tomatoes
- Onion
- Vegetable oil (for deep-frying)
- Seasoning cubes to taste
- Scotch Bonnet peppers (Ata-rodo)
- Curry and Thyme to taste
This week we are blogging about rice and a few simple dishes that can be made quickly, and in most cases, from leftovers.
One of my favorites is leftover beef stew and steamed white rice.
Of course, you can serve rice with stew the first time around, but it seems to be better when it has been in the refrigerator overnight.
Here’s an option that might surprise you: check out the delicious beef stew that our local Vietnamese restaurants serve.
They most often serve it with French bread (remember Vietnam was a French colony for many years), but most will also serve it with steamed Jasmin rice. Stop by Kim Long, Henry’s Café and Bakery and any of the other great Vietnamese restaurants and get a bowl or two of the beef stew to go, take it home, make your own rice and your family will love this combination.
